Bress chicken and silken chicken supposedly don't carry salmonella like regular birds. What does silken taste like?

It looks like no one cares enough for chicken to promote/market specialty breeds.

I generally hate chicken. For me must be dark meat and only other bits of the chicken worth eating to me are offal (e.g. hearts, gizzard, liver etc.). I cry a bit when forced to eat chicken breast. Unlike other meat (e.g. piece of lamb even) no one has sympathy for you if you don't want to eat it. Chicken is the most ubiquitous and agreed upon meat.
All that being said - I actually quite like eating chicken in Asia for some reason. The meat actually seems to have some flavour unlike chicken in N.A.
Not sure if this is still valid - but I suspect why chicken in Ontario/Canada sucks:

Japanese chicken is quite tasty - tastes great raw too!

most people can't cook chicken well so it's not too well enjoyed
white meat chicken is definitely harder to cook well than dark meat
wings and jerk chicken is probably my favourite kind of chicken dish
but a specific type of chicken? the only one i know of is free range running chicken which is supposed to be more lean and tender

Thank you. That explains everything... economy of scale makes it impossible. Especially with the restrictions on chicken farming.

I'm guessing any chicken that you purchase directly from the farmer (has been free to run, and given a good diet, etc).

My Dad was a hobby farmer and we raised Silkie chickens.
I could be wrong, but the black skin/bones along with the black-grey meat would be a turnoff for most typical consumers!
